Made of gourd this is one of the easiest and a must for all recipe. Light, it'a always a simple delight. Dondakaya Pachadi is a classic Andhra style chutney that is popular and simple to make. Ivy gourd(tindora/tendli/gherkins) is abundantly available throughout the year in our part of the world and finds it way to our kitchen almost every week.
Ingredients:
Dondakaya / Tindora-2 cups
Coriander Seeds-1 tsp
Cumin Seeds-1 tsp
Green chillies-6 nos (cut into 2 pieces) (acc to ur taste)
Tamarind-a lemon sized ball
Turmeric powder-1/2 tsp
Salt to taste
For Seasoning :-
Mustard seeds-1 tsp
Red chillies-2 nos
Urad dal-1 tsp
Channa dal-1 tsp
Hing-1/2 tsp
Curry leaves-few
Oil- 2 tbsp

Method:
Wash and scape the outer skin of the Dondakaya. Chop into small pieces.
Heat a kadai with oil, saute all the lentils along with green chilies, then chopped dondakaya till golden. Cool
Grind to a coarse paste, add fresh coriander leaves. Temper with mustard seeds, curry leaves.
