Bhugi Bhaji Recipe

Ingredients:


2 Potatoes (Cut into 4 pieces) 
1 Baingan or eggplant (chopped) 
1/2 Cup Peas 
2 Onions (finely chopped) 
2-3 Green Chillies (chopped) 
1 Piece Ginger (chopped) 
1/2 tsp Garam Masala 
1/2 tsp Red Chilly Powder 
1 tsp Coriander Powder 
Pinch of Asafoetida 
Salt to taste 
1/2 Cup water 
Chopped coriander leaves 
Oil 

Method:


·    Heat oil in a pan and add chopped onions.Fry till they are golden brown.
·    Add asafoetida and fry for another minute.
·    Add potatoes,peas,baingan and all the powdered spices.
·    Now add 1/2 cup water and mix well.Simmer till the vegetables are done.
·    Garnish with chopped coriander.

·    Serve hot.
